We think food should taste like something. Food should have a clear character. Tomato should taste clearly and strongly of tomato. The sauces are reduced. There is acid and character in the bearnais. It has to taste of something, - that is absolutely crucial. We are not into pale food and shades of gray in gray. We like the color of the brush and great taste of the plate.
